Cooked Strawberry Jam (about 8 half-pint jars)

2 quarts crushed strawberries
6 cups sugar

Sterilize canning jars. Combine berries and sugar; bring slowly to boiling, stirring occasionally until sugar dissolves.  Cook rapidly until thick, about 40 minutes. As mixture thickens, stir frequently to prevent sticking. Pour hot jam into hot jars, 1/4-inch headspace. Wipe jar rims and adjust lids. Process 5 minutes in a boiling water bath.

Strawberry Pie

1 carton fresh strawberries (approx.  2 cups sliced)
1 cup sugar
1 cup water
4 tbsp strawberry jello
4 tbsp corn starch
1 baked pie shell (or a graham cracker crust is delicious)
A few drops of red food coloring (optional)

Mix dry ingredients, add water slowly. Cook until thickened. Let cool. Add sliced strawberries to mixture. Pour into baked pie shell or graham cracker crust. Top with whipped cream or cool whip.

Strawberry Dip

2 (8oz.) cream cheese, softened
1 (16 oz.) box 10X powdered sugar
2 half pints whipping cream
1/2  teaspoon vanilla

Cream together cream cheese and sugar. Slowly add whipping cream and add vanilla. Beat until firm.

Strawberry Pretzel Salad

2 2/3 c. crushed pretzels
1 c. margarine
1 (8 oz.) cream cheese, softened
1 c. sugar
1 large cool whip
1 (6 oz.)  pkg.  strawberry jello
2 1/2 cups fresh strawberries

Mix pretzels and melted margarine together. Press into a 9×13 baking dish. Bake at 350 degrees for 15-20 minutes.  Beat cream cheese and sugar into bowl until smooth, then add cool whip and beat together. Spread over pretzel layer. Cool in refrigerator for about 30 minutes. Mix jello and 2 cups boiling water. Add fresh strawberries. Stir until well mixed. Chill until thickened. Spread over cream cheese mixture. Refrigerate.

Strawberry Cakestrawberry cake

1 pkg. (18 ¼ ¼1/4 oz.) Yellow or white cake mix
1 (3 oz.)  pkg. strawberry jello
¾ 3/4 cup vegetable oil
4 large eggs
2 tbsp plain flour
1 pint fresh strawberries mashed with 1/2 cup sugar
1 cup chopped nuts

Preheat oven to 350 degrees. Coat inside of a 10” tube pan with cooking spray and set aside. In a large mixing bowl, combine all ingredients except nuts. Beat well. Add nuts. Pour into prepared pan. Bake about 45 minutes or until tester comes out clean. Serve plain or with whipped cream ore add frosting.

Frosting:

1 pkg. 10X powdered sugar
1/2 stick margarine
strawberries

Cream margarine and sugar. Add a few fresh strawberries to taste. Frost cooled cake.
